WHere is an easy interpretation of a cocktail featured on the seasonal menu. This is a party-sized pre-mixed which is bursting with essence of the Christmas time, making it ideal for a celebration. Any leftover cordial to use in morning drinks, desserts, or to make more rounds of the drink.
The Bikini Cocktail
Yields 10 guests
For the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Citrus Syrup: Combine all the components into a saucepan, heat until it reaches a simmer, stirring to dissolve. Next, remove from the burner and leave to cool down entirely. Pour into a sealable bottle, close it keeping it in the refrigerator, it can be stored for around one month.
Preparing the Batch Mix: Pour the specified liquids in a big jug, leave to sit for 60 minutes, then filter it preferably using a fine cloth, making it perfectly clear.
For serving: Pour 85ml from the batch mix to a cocktail shaker packed with ice, and agitate carefully for a minute to cool it down. Filter to a chilled martini glass or similar, decorate with some cranberries adding the final touch with a light spray of the essential oil over the top.
